Fluffy Cannabis-Infused Buttermilk Pancakes

There’s nothing like a fresh stack of pancakes to set the tone for a leisurely weekend.

The key to keeping these ones fluffy is fresh buttermilk. Pair them with our blueberry cannabis compote for an extra dose of wonderful. For next-level cannabis effects, you can also drizzle these bad boys with our cannabis-infused maple syrup and settle in for a relaxing day.

Ingredients

2 1/2 cups all-purpose flour

2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/4 cup sugar

2 large eggs

1/4 cup

cannabis-infused oil

1 tsp vanilla extract

2 1/2 cups buttermilk

Method

In a large bowl whisk together flour, baking powder, baking soda and salt.

In a separate bowl, whisk together sugar, eggs and oil. Slowly add vanilla extract and buttermilk.

Make a well in the flour mix and slowly pour the wet buttermilk mixture into it. Gently whisk together, noting that the key to light and fluffy pancakes is to not overmix the batter – it should have small to medium lumps. Let the mixture rest for at least 10 minutes.

Heat a pan on medium heat and line with cooking spray or butter. Once hot, drop the batter into the pan in 1/4 cup scoops. Measuring the batter will help keep each pancake at a similar dose.

When the sides are set, the bottoms are golden brown and you see bubbles on the surface of the pancakes, flip them. Cook through and remove from heat.

Top with our infused maple syrup or blueberry compote, and enjoy!
